My apologies for the delay in sharing what we cooked last month. The end of March and all of April has felt like a whirlwind and I’m just now coming out of it.

With the new month, comes the recap of everything we cooked (with recipe links) the month before. I loathe planning grocery lists and coming up with recipe ideas, so I really hope this helps you find something new to cook for yourself and your loved ones. I try to search for mostly healthy, relatively easy recipes that have enough for leftovers after two people eat dinner.

We love this recipe. It is so easy and quick and delicious. Plus it is packed full of veggies.

This was a new recipe to us this month, and we loved it. The recipe has tips for meal prepping this recipe which is always a plus for packing lunch during the week if you aren’t working from home.

We had some leftover red cabbage, and Brian suggested we bring this fish taco recipe up from the archives. It is one of our favorites taco recipes and delivers every time.

We’re always looking to incorporate more fish into our diet. The peach salsa is a perfect mix with the salmon. We add quinoa or rice to round out the meal.

The pandemic really has us on a one-pot kick. This one-pot pasta (and the other on this list) are so easy and so good. Plus, they reheat well for leftovers.

We love these flavorful burgers. Sometimes we add a fried egg on top for extra flavor.

healthy banana bread

I pretty much buy bananas to let at least two of them go bad, so we can make banana bread. I like this option because it is healthier and still tastes amazing.

one-pot creamy tomato spinach gnocchi

Again with the one-pot meals. This one is amazing. It’s not difficult and feels like a Sunday night dinner, but on weeknight time. Seriously, if you’re looking to impress anyone this is the meal to make.

I am trying to add more, yet easy salads to my meal plans. This one was so yummy we made it twice. Plus, it just screams SUMMER (wishful thinking in Ohio). I can’t wait to add this one as a side to future backyard BBQs.

And again with the one-pot. If you love artichoke hearts, this one-pot pasta is for you! Honestly, I am kind of over any pasta that requires more than one pot.

Again, this is a Sunday dinner meal on a weeknight. It will impress. Keep this one in your back pocket.

If you’re wanting to get your veggies this is a great recipe. However, I don’t love this as leftovers as the broth tends to get gross, so definitely make this when you are feeding a big group.
