On Our Plates: December 2021

Happy New Year friend! I hope you had a joyful, healthy, and safe holiday season. We kept everything lowkey here given Ulysses’ surgery earlier in December and the variant roaming around. To be honest, we didn’t cook a ton, and even when we did it was thrown together and not recapped in a recipe due to Uly’s surgery. We had family in town to support and help, and they really took over the grocery shopping and the meal prep as it is honestly one of my least favorite regular adult tasks.

Below you’ll find the five recipes we made during the holiday season. We leaned hard into the daily grazing boards too. Basically spent all of Christmas Day and the day after grazing all day on veggies, fruits, candy, meats, cheeses, crackers, nuts, etc. It was easy and nice to not have to cook a meal.

Full disclosure: I do not consider myself a chef nor do I feel particularly skilled in the kitchen. But I do my best to source mostly healthy, easy-to-make recipes that make enough for leftovers.

We are huge fans of the one-pot or one-pan meals, so when I saw a one-pot ramen recipe we instantly added it to the list. This recipe is a bit spicy (we love spice and it got us a few times). We will make this one again I am sure of it.

The Metz family is a BIG soup family. Especially this time of year. This one felt like a tomato soup, but with different flavors. We loved it. It takes a while to make, but it’s not difficult and there would be ways to make this easier like buying prechopped cauliflower.

We make this recipe so much once Thanksgiving rolls around. We love this stuffing and added it as a side to Christmas Eve steaks. It always delivers and never disappoints.

We love this meal, but I will warn you it is a bit of an undertaking. Definitely a Sunday dinner type of meal or a holiday meal. It is absolutely delicious. It’s worth the effort. I promise!

I am always looking for ways to add more fish into our diets, so when I stumbled upon this recipe I immediately pinned it. It has so many things I love PLUS its only 20 minutes!?! Yes, please!
