With the new month, comes the recap of everything we cooked (with recipe links) the month before. I loathe planning grocery lists and coming up with recipe ideas, so I really hope this helps you find something new to cook for yourself and your loved ones. I try to search for mostly healthy, relatively easy recipes that have enough for leftovers after two people eat dinner.

This is a great alternative to top your pasta with. We used zoodles, and loved it. If you’re looking to get more fish or seafood into your diet add this recipe to the list.

Quinoa bowls are one of my favorite meals, and I’m always looking for ways to incorporate meals with flavors we don’t usually gravitate toward. I loved this one so much. And you could easily add grilled chicken if you wanted to add a meat to it.

This burger recipe is one of our faves. Sometimes if we’re feeling fancy, we’ll add an egg to the burger. Add sweet potato fries and you’re all set.

We make this all the time. It is easy, taste great and makes a ton. We always buy a rotisserie chicken for this recipe to make it even easier. We made this while on vacation because it takes little to not time to make and you don’t need to buy a ton of things for it that won’t get used.

This was a new to us recipe and it’ll definitely be on repeat. The veggies, the pesto — chefs kiss. It’s easy and makes plenty for leftovers.
