My Go-To Salad
Do you ever have days where you crave a filling salad? You know, the days when you can tell your body just needs vegetables?
When I get hit with that feeling, I make my go-to salad. It’s super easy, filling, and full of all the things that are good for you. This usually happens to me after I’ve traveled, especially work-related travel! And I should note, I make myself a large portion. The goal is to eat lots of yummy veggies.
Ingredients:
1 cup cooked quinoa
2 chicken breasts
1 tbsp olive oil
salt
pepper
your choice of greens - I usually do spinach or arugula.
1 pint of cherry tomatoes
1 cucumber
1 carrot
1 bell pepper
pepitas
your preference of dressing - I usually go with Green Goddess
Directions:
Cook 1 cup of quinoa per instructions. I follow this recipe from Love and Lemons.
Once the chicken is baked and cooled, slice it for the salad.
While the quinoa and chicken cook, slice the carrots, cucumber, cherry tomatoes, and bell pepper for the salad.
Assemble salad. I start with the greens and usually grab a big handful, then top with two or three large spoonfuls of quinoa, then some of each chopped veggie, then about half a baked chicken breast sliced, then the pepitas for some crunch, and topped with salad dressing.
This salad really hits the spot when I know I am in need of some veggies and I want to feel full. Plus it feels good to know I am fueling my body with things that are good for me.
