Single Girl Pasta
I do not consider myself a recipe girlie. I’m not one who feels confident in the kitchen to whip up anything that feels too complicated from scratch. However, I do have a few tried and true recipes I fall back on when I do not feel like hunting for recipes and crafting a grocery list.
My top favorite is something Brian and I have dubbed “Single Girl Pasta” because I used to make it ALL. THE. TIME. before we met, and when we were dating long distance. And it’s a comfort recipe I fall back on when life gets busy, or Brian is on the road.
It’s INCREDIBLY simple that I am so hesitant to even call it a recipe. And there are no measurements with this recipe it’s all based on how I’m feeling when I make it. Sometimes, I want more garlic or a ton of spinach.
GROCERY LIST:
Preferred pasta type
Cherry Tomatoes
Spinach
Minced Garlic
Salt
Pepper
Red Pepper Flakes
Olive Oil
HOW TO:
1. Cook pasta as per directions on the box.
2. While pasta is cooking, cut cherry tomatoes in half or quarters.
3. Heat olive oil and minced garlic on low to medium heat in a saute pan.
4. Once the garlic starts to smell fragrant, add in the cherry tomatoes. Saute tomatoes for about 4-5 minutes.
5. Add the desired amount of spinach to the saute pan.
6. When the pasta is done cooking, drain into a strainer then dump pasta on top of the garlic, tomato, and spinach mixture in the saute pan.
7. Add a bit more olive oil, and season with your desired amount of salt, pepper, and red pepper flakes. Continue to saute until spinach is wilted and everything is evenly combined.
8. Distribute into bowls and enjoy!
As I said, it’s really not much of a recipe, but we come back to this time and time again. When we’re wanting to add protein, we’ll add some chopped chicken. My favorite baked chicken recipe is from Purely Nora. We use this recipe for chicken so often.
