Wow, January is almost over. It feels like it dragged on, but also sped by so fast. Strange how time does that. Toward the end of the month, we really leaned hard into eating take-out, but I hope in February we can commit to more meals at home for togetherness and health.

Full disclosure: I do not consider myself a chef nor do I feel particularly skilled in the kitchen. But I do my best to source mostly healthy, easy-to-make recipes that make enough for leftovers.
chicken and cauliflower rice bowls
We loved this meal. This one will be added to the short list of recipes to make again. It was so good and it wasn’t difficult to make.
health peanut butter banana muffins
We liked these but didn’t love them. The muffins definitely tasted better the next day rather than right out of the oven. I’m not sure why exactly, but I would make these again knowing not to eat them right away.
I’m not a huge wings girl, so this wasn’t my favorite meal as it reminded me of wings. However, Brian loved it, and it was a nice change of pace for a usual chicken meals.
gosh one sheet or one-pan meals are where it is at. Thus was flavorful and so good.
We loved this meal! It was full of flavors we love, and it was so easy to make. We will definitely be making this meal again in the near future.
This meal was a bit more intricate, but it was absolutely delicious. Brian and I both loved it. This was probably the favorite meal of the month.
sheet pan salmon and asparagus with potatoes
An oldie, but a goodie. We make this when we really can’t think of anything else to make. Some good veggies and yummy salmon always deliver.
Doing our best to get more fish in our diets with this mediterranean bowl. We enjoyed this as it is full of so many good for you things.
Always love an opportunity to get more veggies with this zucchini noodle meal. We really enjoyed this.
This soup is so good. It seems more like a gumbo to me as the broth gets thick, but it tastes so good and is wonderful for those cold, cold days.
We probably won’t be making this recipe again. It was okay, and even though it was full of things we both love it was lacking the flavor we wanted.
