On Our Plates: February 2021

Geez, was that the longest February ever or what? Between the winter storms across the states and wreaking major havoc in Texas and trying to fight off pandemic fatigue, it was a doozy. I hope wherever you are, you are safe and warm and have your health. Personally, I am happy to see the snow melting and know that warmer, longer days are just on the horizon. And while they might look different still, just knowing I can spend more time outside gives me a bit more hope to get through each day.
With the new month, comes the recap of everything we cooked (with recipe links) the month before. I loathe making a grocery list and coming up with recipe ideas, so I really hope this helps you find something new to cook for yourself and your loved ones. I try to search for mostly healthy, relatively easy recipes that have enough for leftovers after two people eat dinner.

healthy crockpot chicken and rice soup
I love chicken and rice soup. It is better than chicken and noodle soup IMO. And if I can make it myself even better. Our came out looking a bit more like a chowder, but it was still so good. We made it twice this month.
chicken butternut squash pasta
We make this recipe every fall and winter. We love butternut squash and I always seem to have extra walnuts laying around after Thanksgiving. This is hands down one of our favorite pasta meals. Plus it reheats so well.
easy slow cooker chicken tortilla soup
Another slow cooker soup? Yep. Cold months are my favorite months to lean into crockpot soups. I mean, I think I said when fall rolls around I am most excited for soup season. This one is great and you can make it as spicy as you like. Plus, I like my chicken tortilla soups to be brothy and not creamy. This is a winner.
one-pot spicy sausage and tomato pasta
We’ve gotten into one-pot pasta meals during the pandemic. It’s kind of like the one-pan or one-sheet meal. Just dump and cook. This was so good. We will definitely make it again. It is quite spicy, so if you are sensitive to spice just drop it down a notch. I will be on the lookout for more one-pot pasta meals because we love them.

This is a repeat recipe, but we’re always looking for ways to incorporate more fish into our diets. And who doesn’t love a sheet pan meal? The less complicated a recipe is, the more likely I am to like it.

We’re always looking for ways to add more veggies to our meals and attempt Meatless Mondays as best as possible. This meal was very tasty, however, we weren’t very full after eating. If we make this again, I’d add a cauliflower rice side or quinoa to make it a bit more filling.
Anything we can do to change up the flavors in our home we take it. We both love Cajun food, but so rarely make it. So when I saw this dish, I knew we had to give it a try! This will not disappoint.
mexican chicken salad
We love this chicken salad recipe so much. If you’ve followed my On Our Plates posts, you’ve definitely seen this. It’s so easy to make and tastes so good. I use avocado mayo to lighten this up a bit.
paleo ground turkey hash with squash and peppers
This recipe has become a favorite of ours. We make it all the time it seems. Plus, while we love zucchini and squash, we don’t often cook with them, so this recipe helps us add these two beloved veggies into our meals.
At the time of writing, we haven’t made this yet, but it is on dock for the last night of February. I’ve heard it is amazing from friends and we love pad thai, so sign us up!
ANY time I have an avocado about to go bad, I make these brownies. They are incredibly easy and taste just like the real thing. I sent them to work with Brian one day and no one was the wiser.
