On Our Plates: October 2020

Each new month in 2020 is always met with a “wow. how is it already [month]?” and “OMG! It’s only [month].” To the opposite feeling simultaneously. This is how I feel about October being over (and honestly, most of November). It’s dragged on and flown by all at once.
Here are the recipes we cooked for the month of October. I should note, this isn’t everything we’ve cooked, but it’s the fun stuff. I won’t include the pasta nights, the frozen pizza nights, etc.
Full disclosure: I do not consider myself a chef nor do I feel particularly skilled in the kitchen. But I do my best to source mostly healthy, easy to make recipes that make enough for leftovers.
This is the same recipe as the banana bead I make all the time, but with a fall flare. Pumpkin flavored things are not my favorite, but this bread is so good. Plus, it doesn’t hurt that it is made with healthier ingredients.
elote (mexican street corn) tacos
We love this taco recipe. We’ve made it a few times and it delivers every time. Plus, it isn’t terribly time-consuming.
sheet pan salmon and asparagus with potatoes
Easy and healthy. Sign me up. We are looking for ways to incorporate more fish into our diet, and this recipe delivers.
Talk about easy. This is a quick and easy healthy meal. We make it regularly because we almost always have a surplus of cauliflower rice in our in freezer. You could change the veggies up on this for a different vibe if sweet potatoes or brussels aren’t your jam.
Like I said fall is soup season. This soup was so good. You can control the spice/heat for your own preference. 10/10 would make this again, but I will probably blend it next time.
chicken butternut squash pasta
This recipe is always on my list whenever fall and cooler days roll around. I love this pasta and butternut squash recipe. It is comfort food for me. Definitely pick up pre cut butternut squash otherwise you’ll hate this recipe.
These were harder to make than I anticipated, but it was still very fun to make our own donuts. I think if I had a piping tool, it would 100x easier to get the dough in the pan. The donuts were so good. They only last three days in our house.
pulled pork sliders with garlic aioli
This is such an easy recipe. Put it in the crockpot and forget it. Plus, it give you reason to pick up Hawaiian Rolls. I mean who doesn’t love Hawaiian rolls? We make this at regularly. Especially on busy weeks because it makes so much.
We carved one pumpkin this Halloween just so we could roast our seeds. This recipe has a few different flavor combinations.
