Wow, it’s February. Why is it that time just seems to escape me? You’d think with the monotonous days of a pandemic that it would drag, but for some reason, I always look up and another month has passed us by. While we’ve enjoyed our time supporting our favorite local restaurants, we’ve also really enjoyed adding more recipes to our repertoire to enjoy good meals at home. Below the fun and linkable recipes we cooked in January are all linked. Now, it’s not everything we cooked in January. I leave off the boring pasta nights, frozen pizza nights, and the like.

Full disclosure: I do not consider myself a chef nor do I feel particularly skilled in the kitchen. But I do my best to source mostly healthy, easy to make recipes that make enough for leftovers.

Throw everything on a sheet pan and bake it? Yes, please! This meal was so easy, and tasty. Plus it makes plenty for leftovers for lunch.
elote (mexican street corn) tacos
We love this taco recipe so much. I am sure you’ve seen it a handful of times on my stories. It is so easy and it always hits the spot. Plus elote is one of my favorite dishes.
This is probably more a spring or summer recipe and is probably meant to be a side,, but we were looking for something veggie heavy in January and we love this pasta recipe.
This makes so much food, so it’s a good one for a big family or for those who need leftovers. This is such a good meal for the colder months.
instant pot stuffed bell peppers
Gosh this recipe is easy and flavorful. Once you good the rice, it’s pretty quick and is an easy weeknight meal with leftovers for lunch if there are only two of you.

We like this recipe, but didn’t love it as leftovers. However, I heard from a reader that they loved the leftovers better than the night of the meal. To each their own.
Anything we can do to change up the flavors in our home we take it. We both love Cajun food, but so rarely make it. So when I saw this dish, I knew we had to give it a try! This will not disappoint.
We LOVE this recipe. Especially because it is so filling for a vegan meal. We’re always looking for easy and yummy staples to add to our Meatless Mondays list. This recipe takes the cake. AND if you have a tree nut allergy this pesto is for you!
