Spicy Watermelon + Tequila Cocktail

Have y’all ever had a cocktail that tastes so good you can’t stop thinking about it? Or when you read the ingredients you immediately think if I was a cocktail this would be me? Well, that is how I feel about this spicy watermelon + tequila cocktail.

Today, I’m partnering up with one of my favorite ladies to follow, Nora from @purely_nora, to share delicious tequila-based cocktails. We both enjoy an easy + good tequila cocktail.

A little back story on the cocktail I am sharing: When we first moved to Las Vegas a friend took us to Atomic Liquors in Old Vegas, and Brian and I instantly knew we found our hang out place. On our first visit, I had the cocktail “A Blonde and A Ginger” and never looked back. It is the right amount of spicy and sweet that I look for when ordering a cocktail.

Atomic Liquors is the oldest free-standing bar in Vegas. It has an amazing outdoor patio, great draft and cocktail list, great people-watching without the major Vegas crowds, and some very interesting history - it gets the name atomic from customers watching atomic blasts from the roof. We took every person who visited us in our 11 months in Sin City to Atomic because we loved it so much.

Now that we are in Ohio, I cannot stop thinking about this cocktail. Maybe it’s my longing to be back in Vegas or to sit at a bar with strangers and not think twice, who knows? But we have attempted several tries to get this cocktail just right to enjoy at home, and I think we finally nailed it.

HOW TO MAKE A SPICY WATERMELON + TEQUILA COCKTAIL AT HOME:

  • Add sliced jalapeños and 3 shots of silver tequila to a shaker

  • Let rest 5 minutes (if you want it spicier let rest for 10 or if you want it less spicy stick to under 5)

  • Add a smidge of agave, 1 shot of lime juice and 2 shots of watermelon juice to the shaker

  • Add ice to the shaker

  • Put the lid on the shaker and give it a good shake

  • Rim your cocktail glass with lime juice and a mixture of sea salt and Trader Joe’s chile-lime salt

  • Add ice to the cocktail glass and strain shaker over the glass until it’s about 2/3 full

  • Top cocktail with ginger beer (this is our favorite)

  • Garnish with jalapeño

  • ENJOY!

Sharing a couple of snaps below from two of my favorite days at Atomic Liquors. If you’re in Vegas, take the trip to Old Vegas and enjoy a cocktail on Atomic’s patio. It is worth the effort to leave The Strip. I promise.

xx,

Linds

One of my favorite days when @mrs.adrianakincaid and I met @erin.v.stewart for the first time, but it felt like we had been friends for YEARS!

My last visit to Atomic before we moved and the world shut down. Also, sadly watermelon was out of season, so I had a spicy pineapple tequila cocktail.
