Mini Breakfast Frittatas
Like most people, Brian and I don’t have a ton of free time. Especially during football season. We’re constantly running around between work, the dog, the blog, friends, and life to get things done, so we love breakfast options that keep well in the fridge and are easy to grab and go, but also lean more toward being healthy.
I was beyond thrilled when I found this recipe on Pinterest through Rachel Cooks. It brought healthy foods together for a quick reheatable breakfast that keeps in the fridge for up to a week.
Over the years I’ve tweaked the recipe here and there to develop new flavors to keep this healthy breakfast from becoming boring. Here is our go-to recipe when creativity escapes us, and I don’t have the energy to measure things exactly.
Mini Egg Frittatas
Prep Time: 25 minutes
Cook Time: 20 minutes
Makes 24 Mini Frittatas
Ingredients:
One (1) red bell pepper
One (1) orange bell pepper
Two (2) jalapeños
Half (½) a purple onion
One (1) pound ground sausage
One (1) handful of spinach
Salt
Pepper
Dried cilantro
18 eggs
Desired cooking spray
Utensils:
Two (2) muffin trays
Whisk
Cutting board
Knife
Two (2) medium-sized bowls
Directions:
Dice red bell pepper, orange bell pepper, jalapenos, onion, and spinach. Combine in a medium-sized bowl.
Cook the sausage on the stove top until the center is no longer pink.
Take sausage off heat and allow to cool.
Cut up sausage into smaller pieces and combine with veggies.
Preheat oven to 375 degrees Fahrenheit.
Break 9 eggs into a small bowl and season with salt and pepper as desired and whip eggs.
Spray muffin tray with desired cooking spray.
Divide eggs evenly into muffin tray.
Spoon desired amount of veggies and sausage into each muffin tray.
Repeat steps 6-9 with the second muffin tray.
Once the oven is preheated place on the middle rack and cook for 20 minutes.
After baking, cool on a cooling rack for 10 minutes.
Store in an airtight container for up to a week in the fridge.
B and I enjoy about three mini frittatas each in the morning. We heat them in the microwave for one minute before eating.
On a side note, I'd be remiss not to mention how amazing Marie Sharp's Hot Sauce is on the frittatas and most everything else. It is carrot-based, so you don't miss any of the pepper or spice flavors. We purchased a stockpile while on our honeymoon in Belize, and we'll be brand loyal for life.
